Ingredients: Pasteurised whole cow's milk, salt, rennet (suitable for vegetarians), microbial cultures.

Nutrition: Per 100g. Energy 1444kj/348kcal. Fat 28.8g (saturated 18.4g). Carbohydrates 0.9g (sugars 0.2g). Protein 20.4g. Salt 2g.

Characterful but not strong. Our youngest Cashel Blue® will reach you in Ireland and the UK at between 6 to 10 weeks of age and is pleasant, firm and creamy-edged with an established blue character – offset by a mouth-watering tanginess. By 3 months of maturation your Cashel Blue® will have broken down to a richer, fuller and rounder yet not strong flavour.

When Louis & Jane Grubb set out to make Cashel Blue® in the early 1980’s, their ambition was to create a farmhouse cheese that “truly represents the outstanding quality of Tipperary grass-fed milk.” Today, more than 30 years later and in the hands of the 2nd generation, Cashel Blue® is still made by hand on the same 200 acre farm; Beechmount, in Co. Tipperary, Ireland. We also make Crozier Blue, Ireland’s only sheeps’ milk blue.
